tart cherry and dark chocolate oatmeal cookies!

Yesterday, I was feeling sort of fancy. I wanted to make chocolate chip cookies, but the usual Toll House would not suffice. I threw on some clothing and marched myself to New Seasons in the rain, all in the name of cookies! I walked to the bulk foods aisle and got myself a small bag of dark chocolate chips and a small bag of tart cherries and decided to make a variation on an oatmeal raisin cookie! rather than raisins, I used the dark chocolate chips and cherries and for a little extra oomph, when I got home, I chopped up some pistachios to throw in there as well! What I ended up with was a sophisticated, delicious, chewy cookie. If pistachios aren’t your thing, leave them out entirely or substitute your favorite nut! I think walnuts would be pretty nice too!

What you need:

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup plus 2 tbs flour
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cup quick oats
  • 1/3 cup tart cherries, chopped
  • 1/3 cup pistachios, chopped
  • 1/2 cup dark chocolate chips

Preheat oven to 325.

Combine flour, baking soda and salt in a small bowl and set aside.

In a large mixing bowl, cream together butter and sugars until fluffy. Add your egg and vanilla. Pour your dry ingredients into the mixture. Using a spoon, or setting your mixer to low, add oats, cherries, pistachios and chocolate chips.

Scoop into a parchment lined baking tray in rounded tablespoons.

Bake 12-13 mins.

Allow to cool on wire rack.
