chocolate chocolate chip muffins!

I love chocolate. I love muffins. I love chocolate muffins. They aren’t as sweet as a cupcake, but are still sweet enough to satisfy a sweet tooth. I had one for a snack yesterday, and one for breakfast this morning with strawberry jam. I’m glad that I made a small batch, because I just want to keep eating these!! Make yourself a small batch, or double the recipe for a full muffin tin. I dusted the top with dusting sugar, but you could add extra chocolate chips or sprinkles for them to be “chocolate overload” muffins!

What you need:

  • 1/4 cup butter
  • 1/3 cup cocoa
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1 egg
  • 6 tbs milk
  • 2 tbs and 2 tsp plain yogurt
  • 1 cup flour
  • 3/4 cup mini chocolate chips
  • dusting sugar (optional)

Preheat oven to 350.

Line a muffin tin with 6 papers.

In a mixing bowl, cream together butter and sugar. Add cocoa, baking powder and salt and beat til fluffy. Add egg, vanilla, milk and yogurt and beat until combined. Add in flour. Once a batter is formed, stir in chocolate chips by hand. DO NOT OVER MIX.

Pour batter into your lined muffin cups, practically to the top of each. Sprinkle dusting sugar on top of each muffin, if you want. Bake for 25-30 minutes, until no crumbs come off in a toothpick test.
