personal berry crumbles!

A little while back, my husband and I belonged to a fruit delivery service called Organics to You. It was cool. Basically, you pay them monthly and they deliver fresh off the farm fruit to your door weekly or bi-weekly. We ordered the “Bin For One” and it came once a week. No matter how hard we tried, the TWO of us couldn’t finish the bin for ONE, so I sliced up our remaining fruit and popped it in the freezer, canceled our membership and went back to buying fresh fruit the old fashioned way.

A couple days ago, I had a serious craving for a berry crumble but knew that I only had fresh strawberries and would have to go to the market, when suddenly, I remembered that I had an entire secret frozen arsenal of frozen organic fruits just waiting to be eaten in my freezer! I opened my freezer door and pulled out some blueberries and strawberries (I opted to use some frozen strawberries so that I could keep my fresh ones for snacks) and then I got to work, baking some of the yummiest little crumbles I’ve had in a while. Like my husband said, “These are like restaurant desserts, but way better!” He wasn’t just flattering me – they were delicious. This recipe will make you four 3oz ramekins.

What you need:

FILLING

  • 1 cup strawberries
  • 1 cup blueberries
  • 1 tbs lemon juice
  • 1/4 cup sugar
  • 1 tsp vanilla
  • 1 tbs cornstarch
  • pinch salt

CRUMBLE

  • 1/3 cup brown sugar
  • 1 tsp sugar
  • 1/2 tsp cinnamon
  • 2/3 cup all purpose flour
  • 1/4 cup butter, melted

Preheat oven to 375.

Combine all ingredients for the berry filling in a medium sized mixing bowl, toss. Set aside and allow ingredients to thicken.

In a separate bowl, whisk together brown sugar, sugar, cinnamon and flour. Slowly pour in melted butter and stir until mixture resembles large crumbs.

Pour your berry mixture into the ramekins and top with the crumble topping.

Bake for 30 minutes. ENJOY!
